PROTEÄSE UMAMI: Protease enzyme powder
Concentrated enzyme complex produced by a selected strain of Aspergillus Oryzae. It degrades the protein chains by cutting through the tips of the branches, thereby completely degrading the peptide chain and obtaining its elementary molecules, the amino acids. These amino acids generate the umami flavour that is so sought after in some preparations.
Applications:
Improves fermentations, provides umami flavour and therefore enhance the flavour of preparations.
Instructions for use:
Cover, inject or immerse the product with the Proteäse UMAMI solution. Pack and keep at 40-60oC. It is essential to cook the product above 70oC after maceration with the enzymes.
