GLYCEROL MONOESTERATE

Neutral powder emulsifier for ice cream production that acts as a stabiliser and texturiser in the water-oil system.

Ideal for the production of ice cream toppings, chocolates and nuts.

It is also used in confectionery as a fixing agent and flavour stabiliser.

Instructions for use:

For its use, it is mixed with the Mix stabiliser and sucrose, at 40°C and above.

Characteristics and applications:

  • Dosage for ice cream: 0,1 – 0,3 %.
  • Dosage for confectionery processing: 0,5 % – 1 %.
  • Contains: E-471 at 40 %.
  • Format: 1 kg can.
