Tosazu – smoked tuna vinegar 360 ml
Tosazu literally means Tosa vinegar.
Located in Shikoku, the region of Tosa, now Kochi, was famous for its excellent bonito.
Tosazu vinegar is therefore mainly made from dashi, a Japanese broth made from a mixture of bonito and kombu seaweed.
It also contains soy sauce and mirin.
This vinegar is distinguished by its powerful smoky notes.
Taste:
A mild vinegar with a deep umami taste and delicious smoky notes that linger on the palate.
Use:
This vinegar can be used to prepare meat dishes, such as sautéed chicken thighs with aubergines, as a base for vinaigrettes, or marinated vegetables such as sunomono.
Storage:
Keep in a cool place away from direct sunlight.
Shake well before serving.
Once opened, close the cap tightly and store in the refrigerator.
