By means of a controlled baking process, ESCATA ESPINA valorizes the anchovy spine in brine, a product of high gastronomic value, derived from the anchovy production process, and which otherwise generates added environmental management costs for the small anchovy companies of the Escala.

ESCATA ESPINA is marketed in a 100 gram format, designed for practical use in the HoReCa or domestic channels.
Packaged in compostable bags made of NatureFlex TM cellulose and 100% recyclable FSC cardboard.

Depending on the application, for example, 10-15 gr. per Kg. Regarding the salinity level, every 7 gr. of ESCATA ESPINA is equivalent to 1 gr. of common salt.
