BICÄRB is Sodium Bicarbonate (E-500).
Characteristics:
Sodium salt used as a leavening agent in cooking and baking.
Sodium bicarbonate (baking soda) is mainly used to raise dough, whether baked or fried, and to impart a very particular flavor.
It is a solid crystalline compound, very soluble in water and reacts with acids to generate gas.
