The HydroPro™ Plus from Sage-PolyScience is also equipped with Sous Vide Toolbox™, an intuitive on-board guided cooking experience that simplifies sous vide cooking by using scientific algorithms to calculate temperature timing and pasteurization for a wide range of foods.
Programming and repeat firings are simple thanks to“My Presets”and ease of use has been enhanced by a large touch screen that allows easy manual entry of firing parameters.
The powerful heater and newly designed pump system ensure precise temperature control over a wide range of cooking volumes.
Designed with food safety and easy maintenance in mind, the design features a smooth, waterproof construction, a quick-release clamp and a magnetic impeller for easy cleaning and descaling.

HACCP data recording
The HydroPro Plus digital needle probe allows recording of core temperature data throughout the cooking and vacuum cooling process to meet HACCP requirements.
PolyScience HACCP Manager Application
Vacuum cooking and cooling data records are automatically transferred to the PolyScience HACCP Manager app (Android and iOS) via Bluetooth.
The application can easily and cost-effectively store and manage all sous vide HACCP reports across multiple HydroPro Plus models and even across multiple locations.
Unique to HydroPro Plus is a digital needle probe that can display the core temperature of the food during cooking, allowing for vacuum cooking (cooking food at a higher water temperature than the desired final temperature).
Delta cooking provides shorter cooking times while maintaining the precise results of vacuum cooking.
