Organic kuzu from Japan

Umami’s organic kuzu is a natural starch extracted from the root of Pueraria lobata, following the traditional Japanese method. It is used as a thickener, especially in traditional Japanese confectionery.

Unlike other thickeners, kuzu particles are extremely fine, giving a delicate and unique texture. It also helps to improve the thermal preservation of food.

Our kuzu comes from a family producer with over 450 years of history, renowned for having had the honour of presenting their product during the enthronement ceremonies of the emperors of Japan.

Uses:

Use it as a thickener for soups, broths, sauces, cakes or puddings. Dissolve a teaspoon in a little cold water and then heat for a few minutes, stirring until a thick, transparent mixture forms.
