Pëctin LM Lactic – LM PECTIN POWDER
LM Pectin powder especially for calcium-containing products, especially dairy products.
It allows the production of low-sugar reversible coatings, with an elastic gelled texture that can be used to coat pastries, cakes, biscuits or other elaborations.
Fiber type carbohydrate.
It is extracted from citrus fruits or apples and contains salts to optimize gelation.
Characteristics and applications:
- It is reversible and can therefore melt and gel depending on the temperature.
- It can be used in interior confectionery products, in acidic and/or neutral-alkaline products.
- Products coated with this pectin (cakes, cookies, etc.) can be cooled and frozen without any problem.
- Usual doses for gelled products: 10-20 g/kg of fruit.
- Available in 600 gr. and 150 gr. packages.
