HotFöam is a versatile ingredient with thickening and emulsifying properties that plays a crucial role in the stabilisation of hot whipped and hot siphon foams.
In addition, its whipping effect allows the creation of foams without the need for standard stabilisers.
This ingredient is flavourless and acts instantly, eliminating the need for a settling time.
To use HotFöam in hot preparations, it is recommended to heat the liquid mixture and then dissolve the corresponding dose of HotFöam with vigorous stirring.
Once the mixture is homogeneous, it can be placed in a siphon and charged with gas to obtain a consistent
foam.
It can also be whipped with a whisk to achieve a foamy texture.
To keep the foam warm for longer, the siphon can be kept in a bain-marie.
Typical dosages of HotFöam vary between 50 and 100 grams per kilogram of product, depending on the specific application and desired characteristics.
Directions for use:Heat the liquid mixture and dissolve the HotFöam dosage with vigorous stirring.
Pour into a siphon or whip with a whisk.
To keep the foam warm, keep the siphon in a bain-marie.
Usual dosage: A dosage of 50-100 g/kg is recommended.
