STARCRËM – Modified Potato Starch
Thickener based on potato starch modified by hydration that gives a creamy texture when cold.
Substitute for corn starch, giving a softer texture due to a lower percentage of amylose.
It is transparent, applicable to all types of liquids and provides a stable viscosity in the oven, such as
in acidic mixtures.
Use: Mix with the rest of the ingredients both hot and cold.
Dose: A maximum dose of 80 g/kg is recommended.
