Mälto Aquo – DEHYDRATED GLUCOSE SYRUP
DEHYDRATED GLUCOSE SYRUP is a mixture of carbohydrates obtained from the breakdown of waxy maize starch.
It has charging properties, which means that when applied to aqueous products, even acidic products such as vinegar or alcoholic products, it turns them into powder.
It also works with fats (oils) but in this case it is less efficient than Mälto Tapioca.
It is recommended to use liquids with a certain concentration to maintain an intense flavour in the final brew.
Mix the product with aqueous products and grind for a few minutes to break up any lumps.
Instructions for use:
Mixed with aqueous products, including acidic products such as vinegar, absorption occurs, resulting in a powdery texture.
Usual dosage:
150-200 gr. per 100 gr. of liquid product (to be converted into powder).
