Sucrö – SUCROESTER POWDER
Sucroester powder obtained from sugar (sucrose) and fatty acids.
It can be used to emulsify oils with aqueous products, but it is usually used as a foaming product producing “air”, also with alcoholic products.
This ingredient has various applications in the kitchen.
On the one hand, it can be used as an emulsifier to combine oils with aqueous products, achieving a homogeneous and stable mixture.
On the other hand, its most common use is as a foaming agent, allowing it to create ‘airs’ in a wide variety of products, even those containing acidic or alcoholic ingredients.
Sucrö is especially effective for generating foam and airy textures in culinary preparations.
Its ability to retain and stabilise air during the beating or mixing process is what allows these fluffy textures to be obtained.
In addition, its versatility allows it to be used with a wide range of ingredients, providing flexibility in the creation of ‘airs’ in different recipes and preparations.
Instructions for use:
Incorporate it directly into liquid products.
The emulsifier should be kept on the surface of the liquid.
Usual dosage:
3-5 g/kg for foaming aqueous liquids, 7-8 g/kg for foaming alcoholic products and 12-15 g/kg for foaming oil emulsions in an aqueous medium.
