TÖUFOOD EMÜPASTE
Mixture of water-based emulsifiers that generates emulsions with high stability. It is applied directly when cold in preparations containing an aqueous and a fatty part, such as vinaigrettes, mayonnaise, béarnaise or fat-loaded doughs.
How to use:
Pour directly into the preparation and emulsify with vigorous stirring.
A dosage of 5-10 g/kg is recommended for creams and 25-30 g/kg for whipped doughs.
