EMÜPASTE – 1kg

A water-based blend of emulsifiers specially formulated to produce stable, homogeneous emulsions in formulations combining water and fat.

When used cold, it makes it quick and easy to prepare dishes such as vinaigrettes, mayonnaise, emulsified sauces such as béarnaise, creams and high-fat mixtures, helping to maintain a stable emulsion for longer.

Usage: add directly to the mixture and emulsify by vigorous stirring.

Recommended dose:

• Creams: 5–10 g/kg
• Whipped mixtures: 25–30 g/kg

Ingredients: water, polyglycerol esters (E-475), sorbitan esters (E-435), dextrose, sorbitol (E-420), mono- and diglycerides of fatty acids (E-471), citric acid (E-330) and sorbic acid (E-200).
