AMYLASE AND GLUCOSIDASE VERSATILITY COURSE
Developed from the work of Gastrocultura Mediterránea and I+Desserts, this course offers an enjoyable technical explanation, with simple applications and reliable results, so that the professional can immediately give free rein to their imagination.
After explaining the theory behind enzymes, we will focus on the enzymes Amyläse and Glucosidäse, natural products with interesting applications in starch-containing ingredients, and for producing, among other things, sweet recipes without added sugars for cooks, confectioners and bartenders.
