Citrïc – CITRIC ACID POWDER
Acid extracted from citrus juice or fermentations.
It is used in jams, marmalades, gels and fruit pastes to optimise gelling.
Also to reduce browning of fruits and vegetables, to provide acidity, to obtain invert sugar, etc.
Instructions for use:
Incorporate into the product, either as a solid directly or diluted in water.
2-8 gr./ kg. of product.
