INVERTED SUGAR Inverted sugar is a liquid glucose (and fructose) syrup obtained from the inversion of sucrose with moisturising, anti-crystallising and sweetening propierties, and a high fermentative power. Characteristics and applications: Preserves more tender pastry preparations. It maintains the humidity in ganaches and truffles, besides being antifreeze for ice cream. Add directly to the recipe.
