PROTEÄSE SOFT: Protease enzyme powder

Concentrated enzyme complex produced by direct extraction from ripe pineapple stems. It breaks down both animal and vegetable protein chains by cutting them in different places, speeding up protein solubilisation and breaking down the protein structure, thereby softening the product. It also prevents cloudiness in solutions of products with a high protein content.

Applications:

Ideal for tenderising meat, fish, vegetables and other protein-rich products.

Instructions for use:

Cover, inject or immerse the product in the Protease SOFT solution. Package and store at between 40 and 60ºC. It is essential to cook the product at over 70ºC after macerating it with the enzymes.
