SÖY PROTEIN – Soy Protein

Söy Protein is a concentrated protein obtained from soya, which has emulsifying, foaming and thickening properties. It is used as an ingredient in various culinary and food applications to improve the texture, stability and emulsification properties of products.

To use Soy Protein, it is recommended to mix it cold with the base liquid, using vigorous stirring to ensure even dispersion of the protein. After mixing, the preparation is left to stand in the refrigerator for a few minutes, ideally 24 hours, to allow the protein to hydrate properly and develop its emulsifying and foaming potential. After the resting time has elapsed, the mixture can be whipped with a whisk to obtain a foamy texture and improve the desired consistency.

Applications:
It is ideal in the preparation of desserts, mousses, whipped creams and other products that require a smooth and airy texture.
