Mannitöl – POWDERED MANNITOL
Powdered mannitol is used to add sweetness to sugar-free candies and chewing gum; it is also used to coat various fruits, vegetables and other products to create a thin, crunchy and waterproof coating.
It is obtained from fructose or invert sugar (a mixture of glucose and fructose).
Chemically it is very similar to Sorbitöl, they are isomers.
It has a sweetening power 0.6 times the sweetness of sugar (sucrose).
In nature it is found in marine algae and fungi.
Characteristics and applications:
- It is used to obtain hard candies, tablets, chewing gum and, in general, products for diabetics.
- It reduces “stickiness” and is also used as an anti-caking agent due to its low tendency to retain water.
- Once it has turned from solid to liquid, immerse the food in this polyol. On contact with the cold surface of the food, Mannitöl turns into a solid and hardens into a thin, crunchy and impermeable layer. If we want it to crystallise more quickly, cool the product to be immersed in the Mannitöl.
- Usual dose: depending on the preparation.
